Menu Monday


This is for you Joyce!

What is my plan this week?  Last night we attended Corbin's seminary graduation and this Friday will be his High School graduation.  Can you believe it?  My baby has grown up.  This week will be a little hectic in getting everything ready for company (yard, finish planting the garden, laundry, cooking, etc.)

Monday - Hawaiian Haystacks
Tuesday - Crock Pot Mushroom Chili (from Eat to Live.  If it's good I will post the recipe), cornbread
Wednesday - Mushroom Stroganoff (from Eat to Live.  If it's good I will post the recipe) on brown rice, veggie, fruit smoothie
Thursday - Spicy Honey Chicken, mashed potatoes, salad, corn
Friday - Graduation dinner:  pita chips/hummus, potato salad, Olive garden salad w/dressing, fruit, brownies, make your own croissant sandwiches, veggie tray
Saturday - out
SundayTortellini con Beschiamella, Melissa's Spinach Salad (love this one - great one for potlucks), Macaroni Grill Foccacia Bread, edamame

Monday - Memorial Day! - picnic or out for lunch

Another week of menus.  I do this for me, so I have access to my menu where ever I am (if my phone is with me).

MondayBlack Bean Soup & Bahama Mama Tortilla Soup and (bread-maker) bread
Tuesday - Pizza, salad (and pie)....missionaries over for dinner
Wednesday 20 Minute Chicken Enchilada Bowls
Thursday -  Roasted Chicken with Sticky Rice, veggie
Friday - soup and grilled cheese sandwiches or anything else easy
Saturday - Skillet Lasagna, brea

Menu Monday

The leftover Easter ham came in handy for Monday and Tuesday's meals plus I had extra for the freezer.

Monday:  Fried Rice, potstickers, edamame, steamed broccoli (I actually made two batches of fried rice and put one on the freezer).
Tuesday:  Tortellini con Beschiamella (favorite from Richaels), veggie, salad, rolls
Wednesday: Brown rice, Mom's Stroganoff, veggie, salad
Thursday: Black Bean Soup & Bahama Mama Tortilla Soup and (bread-maker) bread
Friday:  homemade pizza and fruit smoothie
Saturday:  leftovers please!
Sunday:  Costa Vida salad made at home

Menu Monday


Today - eat out!  It was too crazy of a day, plus it was on the way to the park where we had FHE with the Turleys.  We started with a nice lesson from Pres. Uchdorf's message about anchoring ourselves to Christ before the storms come.  Then a little (or should I say HUGE) rice crispy treat and a game of bocce.  The kids were wild and crazy tonight, we all had a good time.

I have no idea what to make for the remaining days of the week.  I have been on a soup kick and have made all kinds of new soups, including cream of asparagus soup (which Porter begged for me to make a second time), Hearty Beef Barley soup, egg drop soup, and some yummy vegetable soup (too lazy to look at my phone for the name).   Maybe I should venture out and try something else because Vivian throws a fit when she hears I am making soup!

Ok, let me think.

Taco Tuesday
Wednesday - Hawaiian haystacks
Thursday - a huge cobb salad, and baked potato with fixings (made ahead)
Friday - homemade pizza with fruit smoothie
Saturday - please be leftovers!!!
Sunday - roast beef, carrots, potatoes thrown in the crockpot, salad

Okay that sounds nice and easy to me. I don't have to do any shopping for these items, this was just a quick menu pulled out of my head.

Wednesday: Tuscan White Bean Soup,  Red Lentil Coconut Soup, grilled sandwiches

Thursday:  Fried Rice, Kung Pao Chicken, edamame, potstickers

Friday: Pizza Rolls, veggie tray, smoothie

Saturday:  Bacon breakfast muffins, whole wheat toast, smoothie

Sunday: Roast, potatoes, carrots, bread in bread-maker, salad

Menu Monday


After our FHE lesson, I had a menu planning activity for everyone.  With many cookbooks pulled out of the cupboard, each person was asked to plan one dinner plan.  So with paper and pencil in hand, they each wrote out down their menu and made a list of ingredients that they needed from the store.  The last step was to write their items on the weekly menu board.  They thought it was great fun.  Now we will see how they like cooking their meals this week.  


Dr Phil's Southern Oven-fried Chicken, mashed potatoes, corn, and lemonade (Olivia's day)

Pumpkin Chocolate Chip Muffins, Fruit smoothie, scrambled eggs in tortilla (Vivian's day - she said she would start with breakfast for dinner before learning how to make harder things)

Roasted Herb Lemon Chicken, Twice Baked Potatoes, Salad (Porter's day - this is a huge upgrade from what he wanted to make which was macaroni and cheese out of a box)

Fried Rice, Sweet and Sour chicken (with this canned sauce), spring rolls

Grilled Tuna Sandwiches, 7 Layer dip and chips (Corbin's day)

Menu Monday (just a day late)


I feel like I have been dodging the menu planning for a while now due to being here and there.  So far so good, but I need a plan for grocery shopping.

Pesto and Sausage Baked Ziti, bread, salad (new recipe to me)

Chopped Taco Salad with Homemade Catalina Dressing (new recipe to me)

Grilled Lime Coconut Chicken with Coconut Rice, veggie tray (new recipe to me)

Chicken Gyro, fruit smoothie (we love these)

Menu Monday



I saw an article on LDS Living (online) titled "The Perfect Family Reunion Menu".  It caught my eye because we have a family reunion this summer and we need to plan an easy menu.  So this week I thought I would make it my family's menu!

Menu Monday


Hamburgers, baked fries, pork and beans

Slow Cooker Nacho Chicken Soup (from my new Soup's On cookbook), bean and cheese quesadillas

Chicken Gyros on whole wheat wraps (this has become an easy, family favorite), smoothie 

Lemon Chicken Romano on pasta, salad, corn

Costa Vida Salad made-at-home (All I do is throw a pork roast in the crockpot with 2 cups salsa and 1-2 cups brown sugar; shred it when done.  Then I serve it with warmed tortillas, seasoned cilantro rice, seasoned beans, lettuce, tomatoes, cheese, guacamole, sour cream, ranch, and chips on top.)

Homemade pizza, veggies, smoothie

Roast, carrots, potatoes, bread from the bread maker (I love coming home from church to the smell of   baked bread), salad, dessert

Menu Monday


White Bean Dip I haven't tried this yet, but trust Tonya's taste buds.

Three Bean Chili  I made this a few weeks ago and enjoyed it.

Curry Noodle Soup This is at the request of Olivia.  I use a green curry paste because I don't have red curry paste on hand.  I use a lot less than it calls for and it's still spicy.  I think some pastes are more concentrated than others.

Fish Tacos This is a tried and true family favorite.

Zesty Ravioli Skillet I love this dish.  It's simple to make and delicious, plus it's a great recipe because you just pull ingredients from the freezer.  I store my spinach in the freezer for every recipe except salad.

Here is my plan this week!

Kaytucky Chicken (It was okay, but I don't think it was worth all the work of buying phyllo sheets, I think it would be just as good if I dipped it in egg and then baked it in a bread crumb mixture.)

Asian Sesame Salmon

If the chicken pitas turn out well, I will post the recipe later.

Sunday we are having a family potluck!  My kids will be excited to have a variety of yummy foods plus see aunts, uncles and cousins!
I am making this Chocolate Covered Oreo Cookie Cake for Porter's Birthday this week!

Menu Monday


I did pretty good last week....just didn't make Saturday's meal.  I guess I should have known that wasn't going to happen with the girls having a ballet rehearsals and recitals (yes, two performances) that day.

Monday - No school, this was for lunch.  Avacado, Arugula, and Walnut Sandwiches, Crisp Cucumber Salsa (I added an avacado - and it was delicious),  20-Minute Thai Red Curry Noodle Soup
....for dinner we all went out to Dickey's BBQ
Tuesday - Baked Potato Soup, bread
Wednesday - Linguine with Clam SauceEasy Arugula Salad, baked acorn squash, french bread
Thursday - Taco Salad with some more cucumber salsa
Friday- Easy Pork and Three Bean Chili, cornbread

Saturday - Easy Pork and Three Bean Chili, corn bread

Menu Monday


I am making a couple repeats (Zesty Ravioli Skillet and White Chili) and the others I didn't make last week.  Who knows what we ate instead?

Zesty Ravioli Skillet  - this is a delicious meal all in one skillet. This is my second time making it.
Coconut Curry Soup  I didn't get to this recipe last week.
Creamy White Chili (crockpot) - this was a delicious soup enjoyed by my family.  It's a keeper.  Next time I need to quadruple the recipe so we have leftovers.  I 2 1/2 x the recipe and it was only enough for dinner that night and for the kids to take soup in their lunch thermos containers.
Jalapeno's Spinach Enchiladas - it looks good.
Spinach Artichoke Pasta (from the Pioneer Woman - it looks delicious)
Smothered Pork Chops (crockpot)  Hopefully I remember to plan ahead this Sunday!

Menu Monday (late)



Here is my menu for the week

I don't always follow my plan, for instance, we had the Zesty Ravioli Skillet on Sunday!  I cook according to my mood or time restraints so often times I re-shuffle the days or I don't cook at all.  So don't feel like you have follow your menu 100% of the time; be flexible.

Note:  These are all new recipes to me.
Creamy White Chili (crockpot) - this was a delicious soup enjoyed by my family.  It's a keeper.  Next time I need to quadruple the recipe so we have leftovers.  I 2 1/2 x the recipe and it was only enough for dinner that night and for the kids to take soup in their lunch thermos containers.

SATURDAY:  Vivian's Baptism Celebration!  Pulled Pork/rolls, layered jello salad, hotdogs/buns, broccoli salad, Olive Garden salad, chips, veggie tray, and more to go on the list!

SUNDAY:  Enchiladas (courtesy of Tara), taco cornbread casserole, chips with guacamole/salsa, salad
