Last night after coming home from Lowes, I was helping Vivian get to bed when Olivia told me that Paul had bought two stinky pigs. What? We haven't even seriously talked about this subject. I knew that he had been working on some outside project for hours but I didn't know he had bought farm animals.
I quickly ran outside to see for myself. And sure enough this is what I found - two scared pigs. Paul thought it would be a good surprise for me. Has he not learned that I don't like big surprises like this? How about surprising me with doing the dishes, folding laundry, cleaning out the garage, vacuuming my van, making dinner, etc? Those things would all qualify for a great surprise.
As you can see in the picture above (pig's eyes look funny on this photo) that even Smokey, the cat, is surprised to have more animals. He watched them from a safe distance.
Last Saturday we bought chicks, today we got pigs. I wonder what next Saturday will bring (hopefully nothing).

Easter Chicks Arrive
Paul promised the kids that we would get chicks around Easter. So Saturday was the day! We bought all the supplies, including a heat lamp, water container and base, feeder, chick starter feed, wood pellets, and chicks. We spent about $50 in all. The girls loved up the chicks while Paul built a brooder box for them. At the time we didn't realize that they were only 4 days old, we were told they were older. We then had some sadness because one chick died Easter Sunday and a second one died Monday! That's not very good odds, considering we bought six chicks!
So Monday (after school) Corbin and I bought another 8 chicks for $12 (they only charged us for 5 because of the two dying and they added a bonus chick). So now we have a total of 12 cute little chicks chirping all day long! Now the kids are praying for the health of the chicks. They are a fun addition to our home and keep me company during the day.
Aren't they so cute? These are the Brahma chicks.

Smokey watches the chicks daily with intense curiosity. I think he is secretly counting how many chicken dinners this could be for him! The chicks are completely safe from him so don't worry.

Here are some beautiful chicken eggs from Meredith, a friend in my ward who has two dozen chickens on her little farm! The eggs are so beautiful and they made delicious scrambled eggs for Easter breakfast. Hopefully our little chicks will produce eggs like this (in about 6 months).

Menu Monday
I know my week goes better if I have a plan, but sometimes I don't like making the plan!
Monday - Chicken Noodle Soup (to the recipe I added one can of cream of chicken soup plus some extra chicken bouillon) with homemade noodles and rolls (leftover from yesterday)
Tuesday - Tacos - I'm going to try a different flour tortilla recipe...wish me luck! (super easy if you have cooked hamburger or chicken in the freezer)
Wednesday - Something on the grill - it looks like it will be the only nice day this week, so how about....grilled salmon patties, grilled chicken in this marinade, grilled potato wedges, veggie and fruit smoothie
Thursday -Homemade Pizza (this is now a weekly menu item)
Friday -California Wrap - (New recipe - it is like sushi roll inside a flour tortilla. I will let you know if it's good.)

Baking with Sourdough
Last week I took a sourdough class from Mary Ann. So today I decided to put my new knowledge to the test and make English muffins from scratch with my sourdough start. Last night they were warm and delicious. I made Paul and Corbin be my taste testers; the muffins passed the test!
But my real test was this morning when I toasted the muffins and served them with a fruit shake. The kids loved them, especially Vivian (my pickiest eater). She even wanted one in her cold lunch.
I am excited to have mastered the English muffin, now onto the next challenge - Sourdough French Bread.
I was more nervous about the outcome of this loaf of Sourdough French Bread. But to my surprise, it also turned out marvelous. Paul said it was the best French bread he has eaten. Wow, what a compliment.
What can I experiment with next?

The Cow Whisperer
Some people might find that it is strange that I stop and talk with the cows (after my walks). I plomp myself down on the ground and try to have a little conversation with them. I know they don't talk back, but they are just as curious about me as I am about them. They inch closer and closer and continue to trade places with each other to try and get a better view! Their noses are busy as they try to catch my scent. I think they are recognizing me now.
After my visit with them, I decided to hurry back home (just two houses over) and grab my camera. As soon as I returned, they came jogging over to the fence! I think we are becoming friends.

My New Antique Yellow Mirror
After Photo
I have had this mirror for years but it has never been hung (look below) because I didn't love the finish. So I decided to repaint it and hang it in my newly painted laundry room. I wish I would have taken photos of the different steps in the painting process. First, I sprayed it with a good quality primer. Then I sprayed it with a nice soft yellow. After I antiqued it with a wood gel stain, that I rubbed everywhere (with a sock) and then wiped off the excess stain. I love how it turned out.

Strawberries are now $1.25 at Freddy's- flash freeze them for later or make strawberry jam! Also it's a great time to stock up on ham at $0.99/lb at your local grocery store (Albertsons and Winco). Buy an extra ham or two for the freezer.

Pop the Clutch
This morning Paul needed my help push starting his Mini-Cooper. I guess there was a light left on last night which ran down his battery and he didn't have time to jump start it with cables. So I pushed him and the car out of the garage, with the help of the slope of the driveway. Then it was tough to push forward, so Paul got out and helped me push while Porter steered the car. Then after we got it moving pretty fast, he hurried and jumped in and popped the clutch and off he drove!
This reminds me of the good old college days when I had to push start my car several times before we realized we just needed a new car battery - easy fix.

Menu Monday
As you have noticed grocery prices are steadily increasing. That is why I think it is vitally important to take advantage of grocery sales and plan your menu according to the specials. The key is having a stocked freezers to take advantage of deals when you find them. I also have a second fridge in the garage that I can store extra food.
Monday - Tacos, Spanish Rice, veggie
Tuesday - Chicken Caesar Salad, bread, spaghetti
Wednesday - Power Enchiladas, salad, corn
Thursday - leftovers
Friday - Homemade pizza and fruit smoothies - we all love this meal! Plus I make three pizzas so we have left overs for Saturday's lunch.

Sunday - Hawaiian Haystacks with brown rice and all the toppings

lettuce (green, red and romaine $0.99 head last week at Fred Meyers)

Joseph Smith Movie Now Available for Free Download
This movie is now available online - check it out here. Read the article below to learn about the revision of the film.

"People around the world now have a new way to learn about Joseph Smith, the founder and first president of The Church of Jesus Christ of Latter-day Saints. A film called Joseph Smith: The Prophet of the Restoration is now available online, marking the first time the Church has shared a full-length film on the Internet.
A similar film has been shown since 2005 in Salt Lake City and 19 Church visitors’ sites around the world. Now the film is available to everyone on MormonChannel.org/Joseph and YouTube and has been revised to be more easily understood by a wider audience.
Ron Munns, who produced the original film, said, “The first Joseph Smith film was excellent and was well received by many. However, some parts were not easily understood if you did not already know the story.
Everyone comes to the film with different backgrounds and knowledge, and we wanted to make sure that every person who sees the film walks away with a better understanding of the Prophet Joseph and what he did.”
The film will also help people better understand Latter-day Saint belief in modern prophets, the purpose of temples, and the eternal nature of family relationships. There is also additional context around historical events such as the First Vision — when God the Father and Jesus Christ appeared to Joseph Smith when he was 14 years old.
“Our hope is that people who aren’t familiar with the story will come away with an increased understanding of the role Joseph Smith played in restoring the Church of Jesus Christ,” John Garbett, who produced the new movie, said.
Garbett said this focus on Joseph’s prophetic role prompted many of the changes. For example, a scene showing a leg operation Joseph had as a young boy was removed because it was less essential to the purpose of the film.
“There is less focus on Joseph the man and more focus on Joseph the prophet. It’s the same story, just with a different emphasis,” Garbett said. “There are some things in the old version that people might miss, but there are things in the new version that people will be thrilled to see.”
The revised version is five minutes shorter than the original, and about 40 percent of the movie is new. Footage from the first version was re-edited to fit the revised storyline, and Garbett and his team also shot some new scenes. Regardless of where the footage came from, the crew took great care to ensure that every moment of the film has the same look and feel. “Someone who sees the movie will not be able to tell what was shot then and what was shot now,” Garbett said.
“The beauty of having the new Joseph film available on the Internet is that you can see it at home at a time that is convenient for you,” Nielson said. “Even if you have seen the previous version, don’t miss the opportunity to see the new one. It will help enhance your understanding of the life and mission of Joseph Smith.”
Munns too is excited to have the film seen by a wider audience.
“This is a version that can be easily shared by Church members with their friends not of our faith,” he said.
The full-length version of Joseph Smith: The Prophet of the Restoration can be seen on MormonChannel.org/Joseph and YouTube. It can also be seen in the Legacy Theater at the Joseph Smith Memorial Building in Salt Lake City and at some Church visitors' centers.
In addition, a free download of the movie is available at MormonChannel.org/Joseph in a 300k or 100k MP4 version. Because of the download option, there are no plans to make the revised film available on DVD. Currently, the film is only in English but may expand to additional languages in the future."

More Wheat and Bananas?
I learned that the price of wheat at the cannery increased this week. It went from being $7.65 to $11.45 for a 25# bag, that is a 50% increase in price. Holy cow! So I went to Costco tonight to gather more wheat (Can I ever have enough? Jody and Paul say yes, but I disagree, especially now that I am baking all my bread from scratch). I bought six 45# buckets of Lehi Roller Mills wheat for $16.99 each (it was only $12.99 a few months ago). Costco said that this price will increase the middle of the month, so if you want some more wheat, that is the best price. They just got a shipment of wheat, so they are stocked.
When we (Jen and I) were filling our carts with buckets of wheat, a man came up to us and asked if we were preparing for a holocaust. What? I have never been asked that question. I explained that we were building our one year food storage. He then asked if we were LDS. I wasn't sure what he was thinking, because he kind of looked like a hard-core, scary dude. Come to find out I think he worked in the CIA and alluded to us being smart by getting prepared.
Tonight I also bagged up 13# of ripe bananas for the freezer (they were discounted to 29 cents/lb). They will come in handy when I make fruit smoothies, banana bread/muffins, banana chocolate shakes, etc.

Immaculee, A Woman of God
I just finished reading this book yesterday morning after I crawled back in bed to enjoy some quiet time to myself! After watching the movie, Hotel Rawanda, I was told about this book of an amazing survivor. I am so grateful for the opportunity to read Immaculee's story of faith, hope, and determination to survive.
She hid along with seven other women in a small 3' x 4' bathroom of a pastor for three months during the terrible genocide in Rwanda which led to the death of one million people. She talks about turning to prayer and praing for hours and hours each day. She felt that her faith was under attack so she spent hours contemplating two versus from the Bible, Mark 11:23-24. The verses read, "For verily I say unto you, That whosoever shall say unto this mountain, Be thou removed, and be thou cast into the sea; and shall not doubt in his heart, but shall believe that those things which he saith shall come to pass; he shall have whatsoever he saith. Therefore I say unto you, What things soever ye desire, when ye pray, believe that ye receive them, and ye shall have them."
In her book, Immaculee wrote "even a few minutes not spent in prayer or contemplation of God became an invitation for Satan to stab me with his double-edged knife of doubt and self-pity. Prayer became my armor, and I wrapped it tightly around my heart."
Through prayer she opens her heart and begins to forgive the killers. She says that after she took this step to ask God to "forgive their sins and turn their souls toward His beautiful light" that she was able to pray for the first time with a clear conscience and a clean heart. She said that for the first time she was able to sleep in peace.
From her experience, I am reminded of the power of prayer, faith, and forgiveness. Time after time she was saved from being discovered by the killers. In the end, she even saw them face to face and her faith and prayer led her to safety. In the midst of a terrible nightmare, she found the strength to turn to God. Do we do the same? Can we forgive others for offenses in our lives?

Grateful for a Wood Stove
I am grateful for a wood stove, even more so after we received the first two months of heating bills using propane which totaled around $930.00 (I'm not kidding - I was sick about it). And that was heating our home to 64 degrees at night and 66 degrees during the day. I guess propane is a very expensive way to heat a home, something we learned the hard way. I have wanted a wood stove to have for emergencies, so with this house my wish was granted! But instead of saving it only for emergencies, we use it daily.
The closest natural gas pipeline is around 0.2 mile away but the gas company estimated it would cost 30K to bring it to us, which is definitely out of our price range!
We ran out of wood yesterday, so it has been a little chilly. But luckily we got some more wood delivered today so we can have a warm home and fire! It reminds me of the good ol' Alaska days when I was younger. We were always hauling in wood for the stove. My dad built a gigantic wood box out of our wooden doors. It wasn't anything pretty but is sure did hold a ton of wood.
The closest natural gas pipeline is around 0.2 mile away but the gas company estimated it would cost 30K to bring it to us, which is definitely out of our price range!
We ran out of wood yesterday, so it has been a little chilly. But luckily we got some more wood delivered today so we can have a warm home and fire! It reminds me of the good ol' Alaska days when I was younger. We were always hauling in wood for the stove. My dad built a gigantic wood box out of our wooden doors. It wasn't anything pretty but is sure did hold a ton of wood.

New Temple Announced!
I just so happened to be temporarily out of the room when President Monson announced the three new temples that are to be built. Paul informed me that we are getting a new temple here in the valley! At first I thought he was joking (it's only one day after April Fool's Day), but it was confirmed by Olivia.
I felt blessed to have a temple already near me that I can attend weekly. But another one, wow, we are spoiled. I know more will be required of us! I just can't believe it, this is exciting news!

Pie in a Jar
Paul called home last night after a long day at work. He was looking forward to coming home to having a cup of ice-cream. I thought (to myself) I can do better than a cup of ice cream, so I decided to surprise him with a individual serving of a pie in a jar! I have been wanting to make these for over a year after I found the cute idea on Our Best Bites (here is their link).
I had all the supplies on hand (1/2 pint wide mouth mason jars, pie filling, and ingredients to make the crust)!

I have used a pie crust from this Perfect Apple Pie recipe and now I love this recipe from the Pie Lady.
Line the jar with pie crust.
Fill them up with 1/2 cup of pie filling.
I brushed the tops of each pie with whisked egg yolk and then sprinkled them with sugar. Bake at 375 for 45 minutes or until golden brown on top.
They were delicious! You can even freeze them to bake later.

Vivian's Breakfast
Vivian chose a recipe to make out of her cookbook. She wanted to make "Puff the Magic Pancakes" (like German pancakes). We made these in disposable aluminum fun shapes. They were yummy and the perfect size for a child. Click here for the recipe.
